Tofu

Okay so we don't really eat a lot of meat around here. We eat some chicken and turkey and fish but that's about it. We eat lots of beans and dairy, however we used to also rely heavily on nuts and eggs as forms of protein but obviously can't do that any longer. I am going to attempt to start trying to use Tofu. Can ANYONE out there please send me your best recipes for using tofu. I need ALL the help I can get. We want to cut down on how much actual meat we are consuming and the only way to do that is tofu.

I like to buy EXTRA firm tofu, and stir-fry it. When you open the package, sandwich the tofu between two plates and place a few books on top. This will get rid of excess water, and make it even firmer. Drain the water off the plates in the sink.

Then, just cut the tofu into strips, and stir-fry in some peanut (or whatever) oil. Keep turning the tofu. It is done when it is browned like chicken. Then add veggies/noodles, sauce or whatever you usually stir-fry with.

It's yummy. Even my partner likes it, and she's not a tofu person.

I love tofu!! I like to stir-fry it it just like the person above said. I also like to use it in tacos/sloppy joes instead of meat. I just crumble it up and fry it in a little oil before seasoning it. I also always buy the firm kind, and make sure to press it with paper towels to get as much water as possible out. My favorite though is to cut cubes and deep fry them and just dip in soy sauce and eat!

The Moosewood Restaurant Cookbooks are a great source for vegetarian recipes; there's even a "burrito" that uses sweet potatoes as a cheese substitute that I liked. (Check 'em out at the Library; Mollie Katzen publishes some great ones, too.)

Also wanted to mention TVP--a soy product that you buy dry and rehydrate and use like ground beef: tacos, in traditional ground beef casseroles, chili, etc. Whole Foods carries it and it's not too expensive.

Good luck!!
