The power of food

Have you ever had people in your life, not significant people like your family or best friend, but maybe a classmate or an acquaintance...that feels the need to constantly judge your life, your decisions, and your values? I ran into such a person during class last night who, despite her own shortcomings, likes to give me her two cents about my life decisions. These people are energy vultures, they suck positivity out of others to make themselves feel superior. URGH! As much as she wanted to she did not sway my opinion of moving or school or children. Just my little vent about people who judge.

On the conception front I picked up my 1000mg of Metformin and my 100mg of Clomid today. I'm not really sure what the metformin is doing except maybe increasing my luteal phase by a day or two. The 50mg of clomid I was on made me super cranky and extremely dizzy, however the 100mg that I took last month only made me cranky. So let's hope that all of this medication produces some healthy babies in a short time frame.

I bought a magazine called Clean Eating at the store yesterday. It has some great recipes for people who don't want to use processed food in their diet. Supposedly 40 grams (1.4 oz) of fruity veggies a day (tomatoes, eggplants, cucumbers, green beans, and zucchini) cause childhood asthma symptoms to decrease. Also eating more than 60 grams (2.1 oz) of fish a day helps children have fewer allergy symptoms. Here are two recipes I found:

Kombu Melt

Ingredients
1 pkg of kombu (seaweed), rinsed
1 head broccoli, cut into florets
1 cup shiitake mushrooms, whole or sliced
1 cup low sodium marinara sauce
1 oz raw cheddar style goat cheese, shredded

Instructions
1. Preheat oven to 250 degrees. On the stovetop steam broccoli in a steamer and heat pasta sauce in a saucepan.
2. When broccoli is nearly soft, place noodles (Kombu) in steamer with broccoli just long enough to heat them (1 min)
3. Place noodles in an overproof plate or in a baking dish. Top with broccoli, mushrooms, and heated marinara sauce. Sprinkle with cheese and place in oven with door ajar for 3 minutes or until cheese has melted

Calories: 245 Kombu is rich in iron, a mineral that has been found to help
Total Fat: 6g decrease the risk of ovulatory infertility.

Protien: 11g



Blueberry Buckwheat Pancakes

Ingredients:
1 cup buckwheat flour 1 banana
1/4 cup ground flaxseed 1 1/2 cups water
1/4 cup hemp protein 1/2 cup blueberries
2 tsp baking powder 1/2 cup buckwheat grouts, sprouted or cooked
1 tsp cinnamon 1/2 tsp nutmeg

Instructions
1. In a bowl, mix buckwheat flour, flaxseed, hemp protein, baking powder, cinnamon, and nutmeg
2. In a food processor, process banana and water while slowly adding dry ingredients. Process until mixture is smooth. Stir in blueberries and buckwheat grouts.
3. Very lightly oil a pan with coconut oil and heat over medium head. Pour in pancake batter and cook for 5 minutes or until bubbles begin to appear. Flip and cook 5 more minutes. Cook at medium heat for longer than normal pancakes.
